I’ve had a lot of interest from guests in my recipes, so over the next few blogs, I will share some of my most asked for recipes. Here is Elizabeth’s Homemade Cracker Recipe. So we will take a look into my kitchen. Not only do I like homemade food so I know what’s going into it, but I started making crackers early on opening the Lodge as I couldn’t believe the amount of plastic that wrapped a few crackers. I understand that they are fragile but the packing is not desirable and goes against our focus on sustainability.

Being born into the Bar Coluzzi family cafe business, cooking has always featured in my life. Mum was from Romania, born to Greek parents, and dad was from Rome, Italy. Having a Mediterranean heritage my menu reflects my Italian and Greek roots, so you will definitely find pasta and pizza on the menu.

Don’t worry if you are gluten-free, I have loads of options and also make gluten-free bread and crackers. Just make sure you let me know so I can bake these ready for your arrival.

I’ll start with my homemade cracker recipe. I use one basic recipe and then amend it to add different ingredients.

I generally start by researching a number of recipes and then add my own twist. I’ve found All recipes have a good selection of crackers and I intend to try more of their cracker recipes.  https://www.allrecipes.com/gallery/homemade-crackers/

Ingredients:

  • 200 grams flour
  • 1 tsp salt
  • 2 tlbs extra virgin olive oil
  • 100mls cold water

Then comes the different ingredients and you can add your own:

  • Cracked pepper
  • Rosemary and salt
  • Mixed herbs
  • Wholemeal and sesame (use wholemeal flour instead of white)

Method:

  • Heat oven to 180C
  • Place flour and salt in a food processor
  • Add olive oil, flavours and water
  • Mix until smooth
  • Roll out thinly and cut into shapes. I use my Kenwood lasagna maker to get them nice and even). I then use my pizza cutter to cut into shapes
  • Bake for 10-12 minutes until golden
  • Place on rack to cool
  • Served with Canapés or on our cheese and chocolate platters
